Lentil & Sweet Potato Chili
Part one of a three-part series on flexible weeknight dinners - a spicy lentil chili you'll be able to use in all kinds of meals!
About halfway through the work day I realized what day it was, and that we were getting a new CSA box delivered today. I was excited about it for the rest of the afternoon. Now I just need to remember to put out the trash Wednesday night.
So here’s our haul from this week! I am loving the prevalence of heirloom tomatoes recently! We made meatball subs the other night with a sauce made from heirloom tomatoes, and it was so rich and delicious! I have to find a place to get heirloom tomato plants next spring.
Ok, does anyone know what these peppers are? They are the circumference of a small bell pepper, but clearly are not bell peppers. Our CSA web site lists us as having “Italian sweet chiles” but sometimes the boxes differ slightly from the list they give on their site. Also, every picture of an Italian Sweet Chile that I Googled was red. Thoughts?
I love living in a place with a long growing season. We still have corn! I’m thinking fritters, like the ones at Pambiche?
And three zucchini! We just got new neighbors and I’m thinking they need some baked zucchini welcome.
Annnd last but not least – we got kale for the first time. We’ve gotten tons of chard and definitely some collards (pass!) but this I am excited to try because my sister-in-law Laura and my friend Kim were both telling me about how good kale chips are. I’ve tried to make carrot chips before and honestly, they were a bit of a disaster, but they are also much thicker. Clearly. We shall see. I also still have the beets from the last box and there’s many a chard salad recipe out there.
What the heck, how did I get to 300 words writing about a box of produce? Whatever, I’m going with it.
And lastly, I may have mentioned that there is an important life event going on later this week. Where to get food to celebrate said life event has been consuming many of my thoughts lately, because I have no idea what to pick. Dave suggested biking to Tasty and Sons for a birthday brunch… which sounds pretty awesome. I also have really fond memories of Silk in the Pearl. AND let’s not forget the wings at Pok Pok (or Whiskey Soda, since it’s cold). I could never forget those wings. So, if you’re in Portland and/or have been here, I’m interested in your suggestions.
