Yep, that is correct. The hardest thing to do in this salad is tear the lettuce leaves apart.
Sometimes, you don’t have time to shop. Sometimes you don’t have time to cook. Sometimes, you don’t feel like cooking and there’s a verrry tempting box full of boxes of Girl Scout cookies on the table that would make an awesome dinner. Luckily today I staved off the cookie cravings and actually made dinner, and then I made this lunch for work tomorrow. It’s a variation of my trademark apple-feta-raisin salad. Yes, I do have trademarks. Why do you ask?
Here’s what’s in the salad:
I think a little blue cheese dressing or buttermilk ranch would be great with this, but you don’t need it. There’s so much sweetness in the fruit and delicious creamy salt in the blue cheese… why complicate things?
Furthermore, I’d like to take this moment to preach about fruit for a second. Among food groups, it’s the best bang for your buck. It’s naturally sweet, so you can eat 17 apples in a row if you want and no harm will come to you. In fact, you’ll probably get tons of vitamins from them. OK, maybe not 17. But lately, I’ve been trying to eat as many servings of fruit as possible, mostly fresh but also dried. I’ll admit that sometimes vegetables aren’t awesome, but fruit is actively on the awesome side of the spectrum (especially if you live in an excellent region for produce such as the Pacific Northwest). It makes you feel full but not gross, and it’s full of fiber – a good thing for anyone who is trying to watch and/or improve their weight.
