Would You Like Some Coffee with that Biscotti?

Because just in case, I put some in the dough.

It turns out, chocolatey treats are a delicious sweet with coffee and a fun Valentine for your coworkers. These were a big hit at both of our workplaces.

Thia recipe is from my textbook, “About Professional Baking. ” It has been adapted slightly.

1 3/4 cups AP Flour
1/2 cup whole wheat flour
2 Tbsp ground coffee
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 cup mini chocolate chips
3/8 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup vegetable oil 
1/4 tsp. vanilla extract
1/2 tsp. almond extract

Preheat the oven to 350 and mix the flours, coffee, baking powder, soda, salt and chocolate chips. Set aside.

Using a mixer on medium, blend the sugars and eggs until uniform. Slowly add the dry ingredients and continue mixing. When combined, shape the dough into a long log about 4 inches wide. Bake on a cookie sheet covered in a silpat or parchment paper for 30 minutes. It should look like there are little cracks on the top of the log.

Remove from the oven and allow to cool for a few minutes (<10). Use a serrated knife to slice individual biscotti on the bias. After you’ve sliced, put the biscotti back on the cookie sheet and toast for 6 more minute on the oven.
