Leftover Chili Taco Bowls
This week's lentil chili recipe makes a fantastic base for a healthy weeknight taco bowl!
Sunday was such a great day. We walked to the store. We scheduled a visit with family. We went to the park and threw the frisbee around. It was beautiful outside and apparently frisbee is a lot more exhausting than it was in high school.
We also cooked. A bunch. We worked hard on some shortbread cookies (forthcoming) and some delicious homemade sourdough (also forthcoming). And when the sourdough came out of the oven, it smelled like heaven and there was no way we weren’t going to eat it. So our original dinner plans were thrown out in favor of something that shows off what our starter can do:
Nothing too crazy. But a great way to enjoy some darn good bread.
Here’s what went into that delicious sandwich (per person)
Put one half slice of cheese on each side of the bread, and put the turkey on top of one of them. Toast all bread in a toaster oven or low regular oven until the cheese is melted.
Add the fresh ingredients and the mayonnaise once the bread is off the heat. That’s all! Not too crazy, not even really a recipe, but a great option for a healthy, easy dinner.
