Berry Cream Cheese Breakfast Sandwiches

I saw the idea for a breakfast sandwich on Foodgawker last week. Seems like we are in a constant struggle to make a decent breakfast that we can actually make on a weekday.


This is a pretty good shot at it. I did not actually make it on a weekday, but these were quick, easy and a bigpayoff for so little time being involved.

What an excellent weekend it has been. Dave and I have been all over the place. On Saturday we went to a weird movie at Clinton St. Theater, we had some amazing and cheap tacos at the neighborhood Mexican place, and we went to the green Dragon for a beer and cheese pairing event with Rogue Ales and Murray’s Cheese. We tried five beers and SO much cheese – I really love the Rogue Creamery Caveman blue cheese – this was my second time eating it and it was exactly as I remembered. Blue cheese is one of man’s greatest creations.

Let me tell you, a cold beer on a summery afternoon is hard to beat.

Sunday was also excellent, starting off with a really great yoga class – I am writing this post Sunday night and I know I am going to be SO sore tomorrow. My arms and core are doomed. I hope this new teacher sticks around! We also had a fun dinner at a Thai place – Mee-Sen on Mississippi. I was hungry enough to eat a moose, or a large plate of fried rice. I opted for the fried rice. This time.

Here’s what you need for this super simple, healthy breakfast:

  • ย Whole grain bread
  • A loose handful of berries for each piece of toast you will eat – probably 1/2 cup
  • Cream cheese

This barely needs directions, but I took pictures. I’m working on making better prep photos.

Step 1: Toast the bread. (I didn’t take a picture of this). Did you know I don’t actually own a toaster? I own a toaster oven. But no toaster. The toaster oven works fine.

Step 2: Spread the bread with cream cheese! I softened mine a little bit beforehand by keeping it in my pocket. If you buy this stuff in tubs, it frequently either has water added or is whipped to make it more spreadable. Both of these options result in you buying less cream cheese. But, if you want spreadable on demand, that’s the choice we make.

Step 3: Apply the berries. Press down gently with your fingers to embed the berries a little bit in the cream cheese. Otherwise they will roll off and you will be sad. Not that I found out from personal experience, or anything.

We are so lucky to share a bunch of berry bushes with our neighbors. I love walking outside to pick breakfast!
