Easy Balsamic Pesto Bruschetta

Sounds like a weird combination, I bet. I thought so, too! But I had some at a class I took a few years back and somehow the combination of pesto, tomato and balsamic – especially if you add a little goat cheese or feta into the mix (not pictured!) – is to die for!

Guys and gals, I am heading into a FOUR DAY WEEKEND.

That’s right. Dave and I are taking Monday and Tuesday off and having a mega-romantic weekend to celebrate our 2nd wedding anniversary. So far plans include fancy dinners out, fancy dinners in, the spa, shopping, time with friends, yoga, Batman, and a LARGE PROJECT in our backyard (more to come). And who are we kidding? There will be Battlestar Galactica.

And if we happen to be needing a quick, tasty and fresh appetizer, well this just might be it, since it’s my favorite. You will need:

  • Un baguette (you’re welcome)
  • Chopped fresh tomatoes
  • Fresh pesto (this one is not to YouTube. It’s the recipe!)
  • Drizzle of good balsamic

My in-laws gave us a really nice bottle balsamic vinegar as a housewarming gift at our very first place, along with a bottle of truffle oil. It was the perfect gift!

Anywho, slice the baguette on the bias just a little, and spread with a healthy dollop of pesto. Add the tomatoes and finish with a generous drizzle of balsamic. Then stuff your face. Or, add cheese, but still stuff your face. 🙂
