I am beyond happy this morning because last night I got to head out to the IFBC Opening Party at Mother’s Bistro, and I had so much fun! It was great to see familiar faces (my friends Sala at Veggie Belly and Lauren of Lauren’s Latest), meet some people for the first time IRL (Missy at Mrs. Maki Cooks) and make a ton of new friends (hi, Marylynn at Urban Bliss Media!) It is just a joy to hang out with other food bloggers- everyone is so full of energy and great ideas!

Seriously, I am getting hungry for this quiche again just looking at it. It’s adapted from a recipe from one of my favorite cookbooks ever, How to Cook Everything Vegetarian. It was given to me by Karen, one of my most favoritest people, and it is the most well-used cookbook in my kitchen.
