Orange, Pomegranate and Walnut Lettuce Wraps

If there was any room to deny it before, it’s all gone. The holidays are in full swing! I’m happy, excited and very tired. Last night we had a great holiday party at our home. It was definitely a success, with somehow just the right amount of food and every piece of stemware in our house used. I had an amazing time, and was completely exhausted. We spent Sunday relaxing, watching football, napping and playing Portal 2. We also took a brief trip out to the Portland Bazaar. I love seeing what the local artists are up to!

These lettuce wraps were one of the dishes I served at our party – I was going for something to fit every food philosophy and need possible. With only four ingredients, these wraps are vegan, raw and gluten free – but more importantly, they are tasty and seasonal. They are a snap to throw together and a great healthy snack or appetizer.

Here’s what you need for a party tray of servings – I put the lettuce on one side and the filling in a bowl, to let people make their own.

  • One head of butter lettuce, separated, washed and dried
  • 1 cup of mandarin oranges
  • 1/2 cup pomegranate seeds
  • 1 cup chopped walnuts, roughly chopped

Toss the oranges, pomegranate seeds and walnuts together. Spoon into lettuce leaves and consume! If you like, you could probably sprinkle with goat cheese crumbles, but these are fresh, sweet and delicious without it (and that will throw a wrench into how totally unassailably healthy this snack is).
