Hi friends! It feels so good to be blogging on a regular basis again. I love having a regular stream of posts – AND, I recently made a content calendar for the very first time. Which is ridiculous; they aren’t a new concept. But I’ve never had time before (but it took 10 minutes). It feels good to have a plan. Beyond good! It feels safe, smart and secure. Let’s do this.
As you may have heard, I’m working from home 3 days a week lately! I think that one of my favorite things about working from home is being able to cook for myself. I can eat runny eggs any day I please. Or, I can make a killer salad like this one:
Ok, so it has bacon, homemade croutons and chèvre. It could be lower in calories, but it would probably be less awesome.
I really loved eating this for lunch! I think you will, too.
Bacon, Blackberry & Peach Salad
- 6 cups salad greens
- 4 slices cooked bacon
- 1 ripe peach
- 1 cup fresh blackberries
- 2 cups croutons*
- 2 oz. crumbled feta
- 2 Tbsp. olive oil
- 2 tsp. lemon juice
- Salt and pepper
- *To make homemade croutons, cut rustic bread into 1-inch croutons and toss with olive oil, salt and your favorite dried herbs. Toast on a baking sheet.
- Chop cooked bacon and peach.
- In a large bowl, toss, bacon, peach pieces, blackberries, feta and croutons with the salad greens.
- Drizzle with olive oil, lemon juice, salt and pepper.
