Sparkling Blueberry Ice Cream Floats

by Rebekah โ€” cooked up on June 10, 2016

You guys, this week was National Best Friends Day! I am a little bit late to the party, but you know what? I hang out with my besties on days other than National Best Friends Day, too ๐Ÿ™‚

I has some of my best girl and guy friends in mind when I created this fun, optionally-boozy float using IZZE Sparkling Blueberry Juice. This post is created in partnership with IZZE, by the way.ย

So one thing that I have learned, especially with the crazy hot weather we’ve been having, is that ice cream makes just about everything better. Maybe not like… spaghetti (or does it?). But when it comes to a sparkling, fruity beverage… well, ice cream just takes it to another level.

And I have to say…. I am a genius. I usually think my recipes are pretty good but this sparkling blueberry float is sooo gooooooooooooooooooooooooood.

We’re getting some work done on our house right now, so we are taking a small break from entertaining. But when the work is done, there will be a barbecue! And then we will actually get to celebrate National Best Friends Day a little late. ย And I might just have to grab some more IZZE blueberry so I can make these for the crowd.

I wanted a decadent blueberry swirl in my floats, so I went with a vanilla and blueberry option. I think another type of berry would also be fun – or vanilla bean, or pistachio!

And also, I have a confession. When I made these little babies for my photoshoot, I drank them both. By myself. In the span of about five minutes. I regret nothing!!

Easy Queso Fundido

Easy Queso Fundido

  • Queso Fundido
  • You can reheat this ooey-gooey queso fundido dip in a skillet, or keep it warm in a fondue pot. Save this recipe for your next taco night.
  • Ingredients
  • 1/2 bell pepper, chopped
  • 1 serrano chile, seeded, chopped
  • Kosher salt
  • 3 ounces coarsely grated mild yellow cheddar
  • 3 ounces coarsely grated Monterey Jack
  • 1 tablespoon all-purpose flour
  • 1/2 cup minced onion
  • 1/4 cup beer + additional - anything that is not a stout, porter or IPA will do

  1. Saute peppers and onion in a small, oven-safe skillet (I used an 8 inch cast iron), until the onions are translucent. Set aside.
  2. Next, toss the two cheeses with the flour in a bowl. Add the beer to the pan and bring to a simmer. Add the cheese mixture in, in small batches, whisking constantly. You may wish to add more beer to get the dip to your desired consistency. Stir in pepper and onion mixture.
  3. Finally, sprinkle a little extra shredded cheese on top and broil for 3-5 minutes (keep a close eye on it). Top with salsa, cilantro, sour cream, or whatever else floats your boat!
