Chocolate Peanut Butter Donuts

A funny thing happened when I went to edit photos for yesterday’s post, the Vanilla Pear Muffins. I knew that was the recipe I wanted to do today, and I opened a big group of images to see them at the same time… and realized I had forgotten all about these:

How? I have no clue. They are pretty epic.

These chocolate peanut butter muffins were one of the best breakfast decisions we’ve ever made. You see the chunks of peanut there in the glaze? That was Dave’s genius move. I had been thinking chocolate chips, but I put chocolate chips on a lot of things. This was way more fun. And yes, it was delicious.

I will take this moment to remind you: baked donuts and muffins function almost identically in terms of baking process. You can switch their recipes back and forth in most cases. So while I do recommend that when you have a second, your order this ridiculously cheap Wilton Donut Pan (get two of them), in a pinch a muffin tin will do just fine.

Here’s what you need:
1 1/2 cup AP flour
1/2 cup cocoa (Dutch process if you can!)
1 cup sugar
2 tsp. baking powder
1/2 tsp. freshly grated nutmeg
1 tsp. salt
1 cup milk
2 eggs
2 tsp. vanilla
3 Tbs melted butter

And for the glaze:
1 1/2 cups sifted powdered sugar
1/4 cup milk
1/4 cup creamy peanut butter
1/2 teaspoon vanilla extract
1/4 cup chopped peanuts

Preheat the oven to 325 degrees and spray your donut or muffin pan with nonstick spray.

In one bowl, stir together the flour, cocoa, baking powder, sugar, nutmeg and salt. In a second container, whisk together the milk, eggs, vanilla and butter. Pour the liquids into the solids, and stir to combine using as few strokes as possible so as not to overmix.

Spoon into the donut/muffin cavities and bake for 10-12 minutes, or until a toothpick inserted into the donuts comes out clean.

Allow to cool most of the way. While you do, use a fork to combine the powdered sugar, milk, peanut butter and vanilla. Stir the peanuts into the glaze, or you can save them to just sprinkle on top. Either way, when the donuts are cool, use the back of a spoon to spread over the donuts.
