Crock Pot Dr. Pepper Carnitas

Have I mentioned that I love Dr. Pepper? I do, I love it and accept no substitutes (except Dublin DP, of course). So much the better when you can use it in food!

This crock pot meal was delicious. There are a few things I’d do differently next time. However, it was easy, and coming home to a house that smells like vaguely Dr. Pepper-y slow-cooked pork is a very good thing. (See! We do eat meat!)

Here’s what we used:

1 pork roast
About 3 cups of Dr. Pepper
1 cup of orange juice
Salt and pepper
One white onion, chopped
2 chiles, chopped

The instructions are pretty simple… Just throw it all in the crock pot and allow it to cook for 8 hours on low.

When we got home that evening, the pork was falling apart, tender and slightly sweet. We put it in tacos with lime rice and a little bit of salsa.

This was good, but it was missing something. The Pioneer Woman puts a can of chipotle peppers in adobo in hers… I’m thinking that next time we may go that route to add some spiciness.
