Why I’m doing the Oregon Food Bank’s Local Food Challenge
Over the next couple of weeks, I'll be sharing recipes that can be made with local food, but are affordable for almost any budget. Today's post is an introduction.
My friend and fellow food blogger Michelle over at The Daily Waffle and I were talking the other day, and Michelle brought up a very important question: Why in the world has no one done a dessert 7 Layer Dip? Not only are there basically endless combinations of good things, it also would be just more fun and delicious than the savory kind (which is saying something).
So, we decided to make it happen. Before the Super Bowl. We decided this on Thursday. We each made one, just in case you want to be the rock star of whatever party you’re attending tomorrow. You can check out Michelle’e here!
After boot camp today, my husband, my friend Callie (who took this beautiful photo!) and I headed to the store to strategerize. I think what we came up with is actually kind of good for Valentine’s Day as well – but we could have gone so many directions. Eventually we decided to go with chocolate-strawberry-cream cheese as opposed to coconut-banana-chocolate, etc. This might have to be an annual tradition, so we can investigate all possible iterations.
Here’s what we did:
Start by melting a block of cream cheese in the microwave for about 30 seconds just to make it spreadable (do NOT microwave in the foil wrapper). spread it on the bottom of your favorite 9×9″ brownie pan. Follow with a layer of crushed chocolate Teddy Grahams.
Next, add a layer of strawberry slices….
And then a layer of instant chocolate Jell-o pudding.
Follow the Jell-o pudding with a layer of whipped cream. It will probably take a couple of cups.
Top with more strawberries, swirls of chocolate syrup and chopped almonds. OK, so maybe I have two layers of strawberries, but I’m counting the top ones as decoration.
I recommend dipping either graham crackers, cinnamon pita chips or pretzels into this masterpiece.
