Rosemary Tomato Confit
When I have a ton of fresh tomatoes on hand, this is one of my favorite things to make.
This smoothie is inspired by an excellent margarita I had this weekend – a hibiscus tea flavored one. As I learned on the Celestial Seasonings tour, hibiscus is one of the most-used ingredients in tea. But I picked this tea because it is specifically a hibiscus-flavored one – often in “zingers” and whatnot it can be a background player.
For two 8 oz smoothies, you will need:
– 1 cup of chopped strawberries
– 1 cup of pitted and chopped cherries (I used Ranier – sour might be a little too, well, sour)
– 1.5 cups (ish) of ice
– ½ cup of plain yogurt
– 2 bags of Tazo Passion tea (but – you could use any tea! Pick your favorite that isn’t black.)
If there is a better, easier, sweet summer treat, I haven’t found it.
Make sure you get all of the pits and stems out of your cherries…
Dump it all in the blender and mix it around a bit so the blades can get some liquid and some ice. Then take it for a spin, as AB would say.
