Samoa “Touchdown Bars”

I may have mentioned that I work at the coolest place on the plant, Girl Scouts. I really, truly love my job. And also, it involves a lot of cookies.Which is why I thought it might be fun to get creative with some Girl Scout cookie recipes, seeing as it’s cookie season and all. I’m going to be doing this all week!

These bars were totally amazing – they are a revamp of Touchdown Bars. I have no idea why Touchdown Bars are named that way, but they are.

These little bars couldn’t be easier. Here’s what you need:

  • 1 stick butter, melted and cooled to room temperature
  • 1 1/2 cups finely crushed chocolate graham cracker crumbs (from about 12 whole crackers ground in a food processor or crushed in a ziptop bag)
  • 1 can (14 oz) sweetened condensed milk (not evaporated milk)
  • 1/4 cup chocolate chips
  • 1 box Girl Scouts Samoa cookies

Preheat your oven to 350. I strongly recommend using a 13×9 pan lined with parchment paper. These babies will be a little sticky.

In a medium bowl, pour the butter over the graham cracker crumbs and use your fingers to toss until all of the crumbs are soaked in butter. Dump these into the pan and press firmly to cover the bottom evenly.

Next, pour the can of sweetened condensed milk overtop. Again, make sure the layer covers what’s underneath it.

Finally, use the Samoas and chocolate chips to decorate the top. Press them gently down into the condensed milk.

Don’t pretend that doesn’t make you hungry.

Bake for about 25 minutes, or until the condensed milk is browned (but not burned!)
