Pumpkin Cranberry Swirl Muffins

We are back from the in-laws’ and an amazing Thanksgiving weekend, and I am starting a brand new job today so I haven’t been in my own kitchen for a few days. However, I did have some delicious Thanksgiving foods, so here they are, for your drooling pleasure:
Caitlin and Laura made the mashed potatoes with a huge amount of butter and herbs:

One of my personal favorites: the oyster stuffing:
And here’s the apple and sausage stuffing, another of my favorites. I probably ate a full serving of this just waiting for the rest to get done. And it was delicious.
So delicious. We even made great use of the leftover turkey by making a turkey salad with dried cranberries, celery, mayo and a teeny bit of Dijon.
We began the day by running our tooshes off at the Naperville Turkey Trot, too:
Talk about a great family activity. I think it will be a new tradition.
I spent all weekend barely checking twitter and not having a care in the world. I hope it was that way for you all too.
Anyway, we are back in beautiful Portland and ready to start cooking for the blog again. Happy Monday, everyone. It’s officially Christmas now. Time to put up the tree! 🙂
