Veggie and Hummus Sandwich

Here’s another of my favorite quick and healthy lunches – it’s not much of a recipe, per se, but it’s a darned good sammich.

Veggie Hummus Sandwich

A lot of meals are quick and easy. But not very many quick and easy meals will be both a fresh break from your usual fare AND leave you feeling refreshed and ready to take the afternoon lull head-on.

Here’s what you need for one sandwich:

  • About 1/4 cup hummus – can be store bought or you can make your own
  • 3-4 slices tomato
  • 1/4 red bell pepper (I like to cut it into matchsticks)
  • A handfull of matchsticks of jicama (ditto) (also, this is the same jicama from that salad from earlier this week! so versatile :) )
  • Lettuce
  • Salt, pepper and olive oil
  • A fresh bun, hunk of bread or roll (you can get one at a time at most grocery stores)

And well, I’m guessing you already know how to make a sandwich.  Shoot for structural integrity and you should be in good shape. But I would recommend putting the hummus on top of the lettuce, especially if this sandwich is traveling with you to work. It’ll keep your bread from getting soggy.

I like to drizzle with a little olive oil, and salt and pepper well, just for a little extra oomph.

  1. I have had many a hummus sandwich (wrap really) as work lunches. They’re great! I’m partial to a combo of cucumbers, banana peppers, olives and as much spinach as I can roll up in it but your combo sounds delicious, too.

  2. […] Veggie and Hummus Sandwich – Gone is any meat, and in its place is hummus. If you’re usually a meat-eater you might scoff and say that there’s no way this sandwich could keep you full and get you through the remainder of your workday, but try it first and sea. There’s something about the chickpeas used in hummus that hits the spot without making you feel bloated or stuffed. You’ll be clear-headed and ready for what’s next. […]

Good morning! I’m traveling for work today in LA and planning to hit up some fabulous spots for breakfast and lunch. It’s always fun to be trying food in a city that’s not your own – and there’s nothing like doing the “work hard, play hard” thing and falling into bed, exhausted, at the end […]

Beet Purée with Yogurt and Za’atar

I have been planning to make this gorgeous beet paste forever. I have a brand new bag of za’atar and I was really excited to use it… except I left it on my desk at work for almost a week. And I would get home, and note that I still had my roasted beets in […]

Homemade Mascarpone

I’ve been talking up my homemade mascarpone for over a week, teasing you all with a Strawberry and Mascarpone Tart, and this Grapefruit Arugula Toast. Well, the wait is over. I’m finally writing about the cheese itself! I can’t believe how easy this was, and how much better the homemade version tastes. Or how inexpensive […]
