Veggie and Hummus Sandwich

Here’s another of my favorite quick and healthy lunches – it’s not much of a recipe, per se, but it’s a darned good sammich.

Veggie Hummus Sandwich

A lot of meals are quick and easy. But not very many quick and easy meals will be both a fresh break from your usual fare AND leave you feeling refreshed and ready to take the afternoon lull head-on.

Here’s what you need for one sandwich:

  • About 1/4 cup hummus – can be store bought or you can make your own
  • 3-4 slices tomato
  • 1/4 red bell pepper (I like to cut it into matchsticks)
  • A handfull of matchsticks of jicama (ditto) (also, this is the same jicama from that salad from earlier this week! so versatile :) )
  • Lettuce
  • Salt, pepper and olive oil
  • A fresh bun, hunk of bread or roll (you can get one at a time at most grocery stores)

And well, I’m guessing you already know how to make a sandwich.  Shoot for structural integrity and you should be in good shape. But I would recommend putting the hummus on top of the lettuce, especially if this sandwich is traveling with you to work. It’ll keep your bread from getting soggy.

I like to drizzle with a little olive oil, and salt and pepper well, just for a little extra oomph.

  1. I have had many a hummus sandwich (wrap really) as work lunches. They’re great! I’m partial to a combo of cucumbers, banana peppers, olives and as much spinach as I can roll up in it but your combo sounds delicious, too.

  2. […] Veggie and Hummus Sandwich – Gone is any meat, and in its place is hummus. If you’re usually a meat-eater you might scoff and say that there’s no way this sandwich could keep you full and get you through the remainder of your workday, but try it first and sea. There’s something about the chickpeas used in hummus that hits the spot without making you feel bloated or stuffed. You’ll be clear-headed and ready for what’s next. […]

Well, we thought we had the start of a warm and sunny spring – but alas, the rain is back. My red rainboots got a good workout today. Truly, it’s a good thing. Too little rain this spring in Portland would mean a much, much drier and less fertile gardening season. And the plants are […]

Twice Baked Sweet Potatoes with Greek Yogurt

This is a recipe I used for our Thanksgiving dinner, but I think it would be great for any meal (and it would reheat beautifully for part of a work lunch). But that’s not even the best thing about it. Besides salt, oil and pepper, there are two whole ingredients. Sweet potatoes/yams and Greek yogurt. […]

Whoo. It’s been a busy week already and it’s only Tuesday. At least I think it’s Tuesday. Tomorrow evening begins the first round of Feast Portland parties, and the fun don’t stop until Sunday. I have been working hard both at work and at home to get ahead of the game a little. Blog posts […]
