Bacon, Blackberry & Peach Salad
Hi friends! It feels so good to be blogging on a regular basis again. I love having a regular stream of posts – AND, I recently made a content calendar for the very first time. Which is ridiculous; they aren’t a new concept. But I’ve never had time before (but it took 10 minutes). It feels good to have a plan. Beyond good! It feels safe, smart and secure. Let’s do this.
As you may have heard, I’m working from home 3 days a week lately! I think that one of my favorite things about working from home is being able to cook for myself. I can eat runny eggs any day I please. Or, I can make a killer salad like this one:
Ok, so it has bacon, homemade croutons and chèvre. It could be lower in calories, but it would probably be less awesome.
I really loved eating this for lunch! I think you will, too.
Ingredients
- 3 cups salad greens
- 1 loose cup croutons (homemade is best!)
- 1/2 cup fresh or thawed frozen blackberries
- 1/2 peach, diced
- 1 Tbsp. chevre, crumbled
- 2 cooked pieces of bacon, roughly chopped
- 1 Tbsp. chopped hazelnuts
- For the dressing:
- 2 Tbsp. blackberries, muddled
- 1 tsp. honey
- 1 tsp. red wine vinegar
- 2 Tbsp. excellent quality olive oil
- Pinch of salt
Instructions
- To make the dressing, use a whisk to blend the muddled blackberries, honey and red wine vinegar. Slowly drizzle the olive oil in as you whisk, then season with salt.
- Toss all salad ingredients in a bowl, then dress with the dressing. Taste, then season with salt and pepper.
