Chocolate Chai Donuts

A weird thing happened this morning. Something that has never, ever happened before in this house.

WE RAN OUT OF FLOUR.

Well, AP flour. We still had bread flour, almond flour and whole wheat flour. But we ran out of AP flour! How in the heck does that even happen? We had a 25 LB. BAG in the basement, and we always buy reinforcements ahead of time. Right now we’ve got an extra 15 lbs. of sugar in the basement. I bought a new bottle of mouthwash an entire month before we actually needed it (I guess the bottle just looked close to empty?) We have approximately seven thousand pairs of socks.

But when I brought that formerly-25-lb. bag upstairs this morning, I emptied the rest of it out into the canister and then promptly used all that was left in making bread. How did this even happen? It feels weird to be out of something so basic and have no plans or time to get it until the weekend.

Thank goodness we made donuts for breakfast earlier in the week. We’ve been kind of on a roll with donuts these last few weekends (heh heh). They’re so similar to muffins, and yet it’s somehow more fun when they are in a round shape and have a little bit of frosting. I’m not usually one to buy novelty pans or tools, either, but I’ve never, ever regretted the space in my cupboard being occupied by my two donut pans.

This past weekend, we experimented with chai. I got a half-pint jar of chai powder mix at the most recent PDX food swap I attended. I love getting cool unique stuff like that – it’s the best part of going to these events.

Here’s what you need:

1 1/2 cup AP flour
1/2 cup cocoa
1 cup sugar
2 tsp. baking powder
1/2 tsp. freshly grated nutmeg
1 tsp. chai mix powder
1 tsp. salt
1 cup milk
2 eggs
2 tsp. vanilla
3 Tbs vegetable oil

For the glaze:
2 Tbsp. heavy cream
1/2 to 1 cup powdered sugar, depending on your thickness preference
1/2 tsp. chai mix powder

Preheat the oven to 325 degrees.

In one large mixing bowl, stir together the flour, cocoa, sugar, baking powder, nutmeg, chai mix and salt. In a second bowl, whisk together the milk, eggs, vanilla and oil until combined consistently.

Pour the liquid mixture into the solid mixture and combine with the fewest amount of stir strokes as you can – try to use sweeping strokes and do fewer than ten.

Bake for ten minutes. Allow to cool completely before applying glaze.

To make the glaze, use a fork to combine the cream, powdered sugar and chai mix in a wide bowl. Dip donuts into bowl and allow glaze to set up.
