Pineapple Lasagna Recipe
Yes, you heard that right…pineapple on lasagna? Surely not? Surely. Whilst many people may wince at the idea, pineapple actually works perfectly in lasagna. As the saying goes, don’t bash it until you’ve tried it. This is certainly true with this recipe and you’ll just have to trust me on it!
Like others, I was a bit skeptical when I first heard of it, but actually, pineapple lasagna works. If you think about it, it’s not actually that wild – often people mix sweet and savory and the result is a delicious recipe…despite sounding like something from Spongebob Squarepants.
What I should add is that you need an open mind. For instance, if you don’t like pineapple pizza then you may not like this that much. Having said this, if you do love pineapple on your pizza then this is a well worthy consideration. It’s not just me either, the whole family loved it and there were no leftovers afterward!
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (8 oz) tomato sauce
- 1 can (20 oz) crushed pineapple, drained
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried basil
- 9 lasagna noodles, cooked according to package instructions
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the onion and garlic to the skillet and cook until the onion is soft and translucent, about 5 minutes.
- Stir in the tomato sauce, pineapple, brown sugar, salt, pepper, and basil.
- Cook the mixture for 10-15 minutes, or until thickened.
- In a large bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese.
- Spread a thin layer of the beef mixture on the bottom of a 9×13 inch baking dish.
- Layer 3 lasagna noodles on top of the beef mixture.
- Spread half of the cheese mixture over the noodles.
- Repeat the layering process with another layer of beef mixture, noodles, and cheese mixture.
- Top with the remaining mozzarella cheese.
- Bake in the oven for 30-35 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving. Enjoy
