Pomegranate Mule
Oh man. As I’m sitting here writing, it has been a whirlwind of a week. The week before Christmas is always that way, right? Right?
Luckily, we got a moment to relax and unplug today. Dave worked from home in the morning, which I loved! We made a nice breakfast, did the last of our shopping and went for a nice dinner at our favorite restaurant. And then went to bed early! Well, I’m clearly still up. But I’m actually getting time in for a blog post! This calls for a celebratory beverage.
This cocktail is a festive and fun creation you can easily make for your gaggle of Christmas guests. I love a Moscow Mule, but the actually good ones are definitely not just ginger beer and vodka – most ginger beer’s way too sweet for that. Mayyyyybe if it was a house recipe at a bar. But my money is on lime juice getting added to most professionally served mules – this drink simply requires more acidity than it would have with an off the shelf ginger beer.
But clearly, I didn’t stop there – I also added some grenadine. Yes, it’s a syrup, and I just finished talking about how I wanted this cocktail to be less sweet – but I also wanted it to taste like pomegranate! So there’s enough lime juice in this baby to balance the “beer” (let’s be honest, it’s soda) and the grenadine to boot.
Pomegranate Mule

Instructions
- Build the drink in a rocks glass or a copper mug. Start by filling the glass most of the way with ice cubes. Add the lime, vodka and grenadine over the ice, then top with ginger beer. Stir gently with a straw or chopstick, then top with pomegranate arils and lime wheel.
