Tomato Lentil Soup On A Budget
Previously on PDXFoodLove, I’ve written about Lentil Soup. I’ve also written about Tomato Soup. In this article, I’m combining the two. That’s right – this is a recipe for Tomato-Lentil Soup which is absolutely delicious. Not only this, but it’s also good to make on a budget.
As life isn’t always easy for many of us, stuff like this which is cheap and healthy is really important to learn how to make. On a similar note, this sort of dish is equally as simplistic and doesn’t require much in terms of effort or time. If possible, I would also suggest trying to get ingredients that are as fresh as possible. This means when you cook it, it will be even tastier!
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 large can of crushed tomatoes (28 ounces)
- 4 cups of chicken or vegetable broth
- 1 cup of green lentils, rinsed and drained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the saucepan and cook until the onion is translucent, about 5 minutes.
- Stir in the crushed tomatoes, broth, green lentils, basil, oregano, salt and pepper.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for 30-40 minutes or until the lentils are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Serve the tomato soup and lentil hot with crusty bread or crackers on the side.
This recipe is a delicious and budget-friendly way to enjoy a comforting bowl of soup that is packed with flavor and nutrients. The lentils add a good source of protein and fiber, while the canned tomatoes and spices keep the cost low while still providing a rich, satisfying flavor.
