Whole Wheat Chocolate Chip Waffles
You know how some days you look up from your work and it’s already noon… and then you look up from your work again and suddenly it’s 5? This was one of those days for me. I know what I did today but I don’t remember a lot of time going by. And I know there’s much to be done tomorrow. My sort-of-new job is so much fun and so challenging (in a good way) – it’s definitely keeping me on my toes and I’m enjoying every minute of it. This week I’m actually traveling north by train. I don’t think I’ve been on an Amtrak train since I’ve been a kid (if I have at all). I’m told that WiFi is a normal thing there. Airlines, take note!
This recipe is from the weekend, which I didn’t really talk about in my cocktail post yesterday. What an amazing weekend – Dave and I saw Mike Birbiglia at the Newmark and it was such a great show! When it’s available, I recommend watching his Muppets joke… I don’t want to spoil anything, but it was my favorite moment in a night that was already full of good jokes. We also had great drinks with good friends beforehand, and spent the weekend cooking together and prepping for the PDX Food Swap on Sunday, which was so excellent. I’ll be doing a wrap up post soon.
I think we made these waffles Sunday morning. You might be noticing this white table in a lot of photographs this week – I discovered a new place to take photos in the house and I am so excited about it! I use this table that I bought with a gift certificate I randomly won (so it was free!) and then I just move it right in front of the front door, as if I was barricading zombies, according to Dave, and the light is perfectly diffused by this privacy film stuff that is on the glass front door. It’s amazing what a little change will do for your photography inspiration.
Oh yeah! Waffles. So, perhaps throwing a cup of chocolate chips into your waffles is counter-intuitive. But I think that the chocolate is a nice pairing with the more-assertive flavor of whole wheat.
Here’s what you need.
1 1/2 cups whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
1 egg
1 1/2 cups lukewarm milk (microwave 30 seconds or so.
1/3 cup neutral oil such as vegetable
1 cup chocolate chips
In a mixing bowl, stir together the flour, baking powder, salt and sugar.
In a separate bowl, whisk the egg, milk and oil to combine. Add the liquids into the flour mixture and stir until just combined.
Chop the chocolate chips up until they are half their original size or smaller. Stir gently into the mixture. Make into waffles following the instructions your appliance came with. For us, this made five full-size waffles.
