Imbibe Magazine’s Play Mercy

Yes, that’s right! Two posts in a week. It’s the first time that has happened in a while. One week ago yesterday, I quit my day job (which was with very wonderful people) and went full time food. I have several projects going already, and I’m looking forward to more fun stuff coming my way and having more time to spend on my blog! It’s going to be an adventure! Wish me luck 🙂

A couple of weeks ago when we had family in town, I bought a bottle of Cocchi Rosa at the Meadow, one of my favorite shops in Portland (they sell bitters, vermouth, chocolate, flowers and salt – all of life’s necessities!) I don’t think any bottle on our shelf right now is depleting so quickly. It’s sweet and delightful and I am so glad we picked it up.

This is my favorite cocktail I’ve used it in so far. It’s a recipe from Imbibe they call the Play Mercy, that is so light and refreshing! I can’t wait to make it again. And I hope one day I am cool enough to name cocktails. You have to admit, it’s an art.

It’s not too cold for at least another week here in Portland, and even though I do like winter I’m going to fight it as long as I can. Because I like summer (and summer cocktails) even better.

Here’s what you need:
3/4 oz. Aperol
3/4 oz. Cocchi Rosa
3/4 oz. St. Germain
3/4 oz. lemon juice
Club soda (3-4 oz.)

Shake the Aperol, Cocchi Rosa, St. Germain and lemon juice until icy cold, then strain into a collins glass. Top with cold club soda. Garnish with a lemon wheel or peel.
